Though he initially pursued architecture in Miami, his passion led him to study at Johnson & Wales University and work under acclaimed chefs, eventually purchasing and transforming the iconic Chayote Restaurant. Since then, he has launched several acclaimed restaurants, including MARIO PAGÁN, RAYA, and LA CENTRAL in Puerto Rico, as well as CHAYOTE Barrio Kitchen in Florida—his first U.S.-based venture. His cooking blends traditional Latin flavors with global influences, forming the foundation of the “Nueva Mesa Latina” movement.

He champions sustainability and supports local agriculture, earning recognition from the James Beard Foundation and participating in their global initiatives. He has appeared on Food Network’s “NEXT IRON CHEF,” hosted numerous shows on FOX Latino, and co-authored several culinary books.
