Chef Mario Pagán is a renowned culinary innovator and passionate advocate for Puerto Rican cuisine. With over 20 years of experience, he has played a pivotal role in redefining and modernizing the island’s culinary traditions. Born and raised in Puerto Rico, his early love for cooking was inspired by the women in his family.
Born and raised in Puerto Rico, his early love for cooking was inspired by the women in his family. Though he initially pursued architecture in Miami, his passion led him to study at Johnson & Wales University and work under acclaimed chefs, eventually purchasing and transforming the iconic Chayote Restaurant. Since then, he has launched several acclaimed restaurants, including MARIO PAGÁN, RAYA, and LA CENTRAL in Puerto Rico, as well as CHAYOTE Barrio Kitchen in Florida—his first U.S.-based venture. His cooking blends traditional Latin flavors with global influences, forming the foundation of the “Nueva Mesa Latina” movement.
Chef Mario’s influence extends far beyond the kitchen. He champions sustainability and supports local agriculture, earning recognition from the James Beard Foundation and participating in their global initiatives. He has appeared on Food Network’s “NEXT IRON CHEF,” hosted numerous shows on FOX Latino, and co-authored several culinary books. He’s also worked closely with Chef José Andrés and Discover Puerto Rico to promote the island’s gastronomy on a global scale. In addition to his culinary work, Mario is deeply committed to philanthropy through his own charity and support of organizations like St. Jude’s. His career is a testament to his dedication, creativity, and mission to elevate Puerto Rican cuisine and culture around the world.”
